I have a Lowrey GAK25H but for the life of me, I cannot find how to shut off the sustain.

Whether you're talking upper manual sustain or pedal sustain, the tabs and controls for these are clearly marked. IIRC, the pedal sustain is in the centre of the pedal tabs at the left and the upper sustain tabs are over at the right.
If you're saying that you have constant sustain on the upper manual voices even with the sustain tabs off, then there's clearly a fault with that part of the organ. I'm not familiar with how that works on the GAK25H, so I'll let others advise.It's not what you play. It's not how you play. It's the fact that you're playing that counts.
